Clairin Vieux Sajous 4 years old represents one of the first real sherry cask in the history of rum.
It is produced in the grand terroir of St. Michel de l'Attalaye, with the Cristalline cane, one of the best ancient varieties, now grown only in Haiti and harvested by hand. Fermentation starts spontaneously with indigenous yeasts; the distillation alembic is heated over the bagasse fire; the cane fiber is squeezed and dried in the sun.
It was fully matured in the tropical climate of Port-Au-Prince, in barrels that Velier bought from Lustau and which contained the prized Oloroso and PX, filled on November 30, 2017 and left until August 2021. The still used distillation alembic in his small distillery was built personally by Monsieur Sajous.
