Holyrood NMS01 is the first New Make Spirit bottling in the Brewer's series. Holyrood has in the tradition of Edinburgh as a brewing city the source of inspiration for the creation of the basic elements of taste. In this case it shows how Brewer's yeast and Distiller's yeast can work together. American Ale yeast adds a cleansing sensation in the mouth, with soft peach and citrus notes. This adds extra flavor to the New Make alongside Distiller's yeast, in the traditional M strain, which is super efficient at converting fermentable sugars. The wash at about 8% was distilled after 111 hours of fermentation and bottled at 60%.
Holyrood is a modern distillery in the historic heart of Edinburgh. Inspired by the city tradition and without fear of experimenting, it aims to give shape to the whiskey of the future.
