NMS02 is the second New Make in the Brewer's series from Holyrood Distillery. The series highlights several elements of the wash process, the 'beer' behind whiskey distillation, elements that create much of the spirit's flavor and character. Crystal malt replaces 10% from Distiller's malt which makes up the rest of the mashbill in this recipe. In the wash, the crystallized sugars of this special malt give clear, nutty and caramel flavors.
