Killowen Old Tom Gin is the brainchild of Brendan Carty, distiller and owner of the distillery. Brendan has also applied his unique vision to one of the more traditional styles of gin: his version of Old Tom, in fact, does not see the addition of sugar but derives its softness from being aged in cask for a few weeks and from the slight addition. of honey and licorice. Distilled in pot still fueled by direct flame, it has a full and explosive body.
Killowen is a place where traditional methods and the best natural resources have been combined to produce artisanal distillates of the highest class. Brendan Carty, an Irish architect passionate about whiskey, decides to devote himself entirely to distillation in 2016, when the construction of the micro distillery begins, followed and partly carried out personally using mostly recycled materials. His approach is authentically artisanal: in addition to selecting different varieties of cereals in order to explore the different aromatic potentials as much as possible, he works in total autonomy, doing everything by hand and without any production process being automated or standardized. Depending on the cereal and the aromatic profile sought. Part of the range is also a series of Craft Gins, always distilled using botanicals typical of the area and hand-picked.
The packages provide the consumer with all the details regarding the origin, production, composition of the blends and the type of wood used. The result of this approach are bottlings highly rated and sought after by enthusiasts, which have made Killowen a true cult Craft Distillery.
