Providence comes from Distillerie de Port-au-Prince and is the first Providence on the market to include barrels aged from number 3 to number 27, all ex-Caroni.
The Cristalline sugar cane used for Providence rums comes from Michel Sajous, in Saint-Michel-de-l'Attalaye, 150 kilometers to the north. Fermentation takes place with natural yeasts, allowing the development of an aromatic complexity. The liquid obtained after fermentation is distilled in a bain-marie in a discontinuous copper alembic, built by Müller in collaboration with Vittorio Capovilla.
