Name: Derthona DOC
Grape variety: 100% Timorasso
Producer: Sassaia – Alessandrini family
Production area: Piedmont
Description: A Timorasso with great personality and depth. The nose reveals citrus blossoms, white peach, herbaceous notes, and a pronounced minerality. As it ages, hints of honey and sweet spices emerge. On the palate, it is structured, long, and harmonious, with considerable aging potential.
Vinification and refinement: Manual harvesting into small crates, followed by cold maceration at 5°C for 24–48 hours. Soft whole-cluster pressing and spontaneous fermentation in French Chassin oak barrels at a controlled temperature. Aged for at least 9 months in new, neutral French barriques to enhance structure, minerality, and longevity.
Pairings: Structured fish dishes, white meats, mature cheeses.
