Vinification and refinement: Hand-picked grapes from multiple vineyards, chilled for 24 hours to preserve their freshness. Spontaneous fermentation in stainless steel and French Chassin barriques, followed by at least nine months of aging in the same vats to develop elegance, complexity, and aromatic clarity.
